To the entire female population, this day brings the anticipation of chocolates, flowers, and spending a night torn from the comfort of their favorite sweatpants (..just me?).
So, in honor of this universal day of love I have created a treat literally filled with it.
heart-filled cupcakes!
What you will need:
- White or yellow cake batter
- Red or pink coloring gel
- Small heart-shaped cookie cutter
Pour about 1/3 of the cake batter into a separate bowl and use color gel to get the desired shade of pink/red. Pour into a greased & floured 8x11 and bake until the sides pull from the glass and the top springs back to the touch. When deciding if you have enough in the pan, just use your judgement here. Keep in mind that the cake will double, and the width of the heart will have to fit inside the cupcake.

As soon as the cake comes out, use the cookie cutter to stamp out hearts. I got 28 out of an 8x11 dish.. I imagine you would get about 16 from an 8x8. Lay hearts out on a pan and put into the freezer for about 30 minutes, or until completely cool and firm to the touch.
Fill cupcake wrappers 1/2 way and push chilled heart into the center until it hits the bottom. Pour another spoonful or two on top so you no longer see the heart.
VERY IMPORTANT!! The whole point of this is to see the heart, so you'll need to know which way to cut, right? To do this, pick a patterned wrapper where you can designate a specific point as the front. You could also make a little pencil mark if using plain wrappers.
Bake until toothpick comes out clean.
When they're all done, you should see the heart when you cut down the center!
Now decorate however your heart desires. I went for a bouquet of roses, as they're much cheaper than the real thing.
